Culinology 101 Workshop IV:  Development of Food Systems & Commercialization

 

Location:  Guelph Food Technology Centre, Guelph, Ontario, Canada

This 3-day course is designed to help chefs learn the fundamentals of new food development.  Topics include:  new product development, flavor technology, developing food systems, benchtop evaluation, scale-up issues from pilot to production, and sensory evaluation.  Includes a hands-on lab practicum.
