Student Culinology® Competition

2013 Student Culinology® Competition

Student teams will develop a proposal for a North Carolina regional cuisine concept featuring a chicken entree with two sides for a casual dining chain which includes both gold standard recipes and the corresponding product formulations.  The concept must be based on North Carolina regional cuisine and feature chicken as well as two technical ingredients – a starch and a hydrocolloid - from sponsor companies.  Selected finalists will commercialize and ship their entree with two sides to the competition site in Charlotte, NC.  On the day of the competition, finalists will create the fresh product version of their entree with two sides for a casual dining chain, and be judged in part against how well the commercialized meal components match up against the gold standard. 2012 Student Culinology® Competition  

RCA's 2012 Student Culinology Competition was held at the Culinary Institute of America - San Antonio on March 22, 2012. Student teams competed for industry-wide recognition and a first prize of $5,000.
